Pork and Chicken Adobo in Chipotle sauce



 Serves 4
 Ingredients: 2 lbs. chicken
                   3 potatoes
                   1 cup chopped squash
                   1 tbsp of chipotle sauce
                   low sodium kikkoman soy sauce
                   balsamic vinegar
                  6 cloves chopped garlic
                  3 pcs. bay leaves
                  1/2 tsp. whole peppercorn
                  1/2 cup button mushroom
Directions: Saute chicken in olive oil with garlic until brown.Add Soy sauce ,balsamic vinegar,chipotle sauce,peppercorn,bay leaves.Boil and simmer for about 20-30 mins.Add squash and potatoes and cook until tender.Add mushroom.Simmer for about 2-3 mins.
