Hearty Chicken Soup with Green Papaya & Pepper leaves (TINOLA)

















Serves 4   Cooking time: 30 to 45 mins.
Ingredients:
 1 lb chicken(your choice of favorite part/bone-in or boneless)
 1 Whole Green Papaya about 2 lbs.-cut 3 inches diagonally
 1 pkg. frozen pepper leaves or fresh pepper leaves if in season (Apr to jun)
 Slivers of Ginger about 7 pcs.
 1 whole onions chopped
 1 tbsp. fish sauce
 1/4 tsp wholepeppercorn salt to taste
 1 tbsp vegetable oil
 3 cups chicken broth or rice wash

Directions:
               1) Saute onions and ginger in a tbsp vegetable oil. Add chicken slices, peppercorn & fish sauce.Cook until golden brown.
               2) Pour in 3 cups of chicken broth or rice water.Boil and simmer for 30 mins.
               3) Add papaya.Continue to simmer for 7 to 8 mins.Add green pepper leaves.Season with salt or fish sauce. Cook for another 2 mins.
               4) Serve hot with rice or by itself.Best eaten on a cold/rainy day. Enjoy!
