Stewed Turkey neck



Serves 4
Ingredients: 2 lbs. turkey neck 
                   1 big can tomato sauce
                   1 green bell pepper
                   1 red bell pepper
                   1 medium chopped onion 
                   3 carrots
                   5 cloves minced garlic
                   3 potatoes(any kind)
                   salt and pepper
                   2 cups water
                  1/4 cup grated cheddar cheese
Directions: Cut each turkey neck into 3 pcs. Saute garlic and onions for 3-5 mins. Add turkey neck.Let it brown for few minutes.Add salt and pepper.Pour in tomato sauce and water. Let it simmer until tender.Add in carrots and potatoes.When vegetables are almost cook add in bell pepper. Season to taste.Turn off heat.Add grated cheese and stir.

Pork and Chicken Adobo in Chipotle sauce



 Serves 4
 Ingredients: 2 lbs. chicken
                   3 potatoes
                   1 cup chopped squash
                   1 tbsp of chipotle sauce
                   low sodium kikkoman soy sauce
                   balsamic vinegar
                  6 cloves chopped garlic
                  3 pcs. bay leaves
                  1/2 tsp. whole peppercorn
                  1/2 cup button mushroom
Directions: Saute chicken in olive oil with garlic until brown.Add Soy sauce ,balsamic vinegar,chipotle sauce,peppercorn,bay leaves.Boil and simmer for about 20-30 mins.Add squash and potatoes and cook until tender.Add mushroom.Simmer for about 2-3 mins.

Ground Turkey Spaghetti


Serves 4
Ingredients: 2 lbs. ground turkey
                   1 can small tomato paste
                   olive oil
                   8 cloves minced garlic
                   3 tbsp finely chopped fresh parsley
                   1 small box durum spaghetti
                   1 cup marinara sauce
                   1 sm can cliced black olives(optional)
                   1/4 c parmesan cheese
                   salt and pepper
Directions: Boil Pasta in Salt water for about 7 mins.(Make sure to add generous amount of salt to boiling water).Meanwhile, saute garlic in olive oil with the ground turkey.Add tomato paste and half of the parsley.Pour in marinara sauce.Let it simmer for about 10 minutes.Add the pasta and cook for another 4 mins.Mix in chopped olives and parmesan cheese.Top with remaining parsley.Enjoy.

Prawns in delightful bed of vegetables


Serves 4      Cooking time 20 to 25 mins.
Ingredients: 1 lb headless prawns
                  2 stalks celery
                  2 medium size portabella mushroom
                  1 red bell pepper
                  1/2 lb string beans(cut in half)
                  1 small chopped onions
                  3 cloves minced garlic
                  1 eggplant
                  salt and pepper to taste
                  2 tbsp of olive oil
                  1/2 c chicken broth

Directions: 1) Saute garlic and onions for about five mins.
                 2) Add celery, string beans,eggplant and mushroom.Pour in the broth.
                 3) Cook for seven mins. Put in bell pepper. Continue cooking for another 3 mins.
                 4)  Serves hot with rice or mashed potatoes.Enjoy   
                      

Supreme Tuna Sandwich with a twist

Serves 2      Prep time:10 mins.
Ingredients: 1 can Albacore Tuna
                  1 tbsp honey mustard mayonnaise
                  1 tbsp whipped cream cheese with chives
                  1 tbsp whole cranberry sauce
                  3 slices of  tomatoes
                  3 slices of onions
                  Romaine lettuce
                  1/2 avocado
                  1 slice of swiss cheese               
                  2 slices of any choice of your favorite bread
                  
Directions: 1) Mix first four ingredients.
                 2) Place swiss cheese on a piece of bread.Melt in toaster oven.
                 3) Layer onions,tomatoes,avocado and tuna mix on melted cheese.
                 4) Top with romaine lettuce and the other piece of bread.
                 5) Serve right away.Good with any soup of your choice.Enjoy!

Pork Sour Soup (Sinigang na Baboy)

Serves 4       Cooking time: 45mins to an hour
Ingredients:   1 lb spareribs or pork butt-2 inches in size
                    1 pkg. frozen tamarind or 5 squeezed medium lemon
                      Note: for tamarind-boil, mash then drain.Save the juice
                    1 ripe tomato or a can of diced/whole tomato            
                    1 chopped medium onion
                     fish sauce or salt. You may also use chicken cube
                    1 small daikon radish
                    3 pcs. jalapeno
                    1 cup long beans or 1 bundle on choy(kangkong)
                    1/2 cup taro

Directions:1) Boil meat in 3 cups water.
                2) Add tomatoes and onions. Boil and simmer for 30 minutes or until meat is tender.
                3) Pour in tamarind or lemon juice. Add radish,string beans and jalapeno.Boil for another 5 mins.
                4) Season with fish sauce or salt.Or you can use chicken cube
                5) Serve hot with rice or by itself. Enjoy!

Hearty Chicken Soup with Green Papaya & Pepper leaves (TINOLA)

















Serves 4   Cooking time: 30 to 45 mins.
Ingredients:
 1 lb chicken(your choice of favorite part/bone-in or boneless)
 1 Whole Green Papaya about 2 lbs.-cut 3 inches diagonally
 1 pkg. frozen pepper leaves or fresh pepper leaves if in season (Apr to jun)
 Slivers of Ginger about 7 pcs.
 1 whole onions chopped
 1 tbsp. fish sauce
 1/4 tsp wholepeppercorn salt to taste
 1 tbsp vegetable oil
 3 cups chicken broth or rice wash

Directions:
               1) Saute onions and ginger in a tbsp vegetable oil. Add chicken slices, peppercorn & fish sauce.Cook until golden brown.
               2) Pour in 3 cups of chicken broth or rice water.Boil and simmer for 30 mins.
               3) Add papaya.Continue to simmer for 7 to 8 mins.Add green pepper leaves.Season with salt or fish sauce. Cook for another 2 mins.
               4) Serve hot with rice or by itself.Best eaten on a cold/rainy day. Enjoy!

Coco crab with mixed vegetables

Serves 4: Cooking time 45 mins to an hour
Ingredients:
2 dungeness crabs (quartered)
1 can coconut milk
1/2 lb. string beans
2 celery stalks
1 bittermelon (optional)
1 tsp. grated ginger
4 cloves finely chopped garlic
1/2 tsp. red pepper flakes
1 tsp. blackbean sauce

  
Directions:
                 1) Saute garlic, ginger, and black bean sauce for 2 minutes.
                 2) Pour in coconut milk and red pepper flakes until boiling
                 3) Put crabs in mixture and bring to a boil, leave simmering      for 1/2 hour.
                 4) Add all vegetables to mixture.Simmer for another five mins.
                 5) Serve hot with rice or just by itself. Enjoy!
